Chocolate Lava Cakes |

Chocolate Lava Cakes

Yield: 4 to 6 servings | 6 3 1/2" cakes or 4 larger
Ingredients
1/4 cup (50g) all-purpose flour
1/2 cup (55g) confectioners' sugar
3/4 cup (90g) almond meal or almond flour
2 egg whites
6 tablespoons unsalted butter, melted
8 ounces good-quality dark chocolate (60-70%), melted
4 to 6 small squares good-quality dark chocolate (60-70%)
Directions
- Preheat oven to 300 degrees F (150 degrees C). In a medium bowl combine flour, sugar, almond meal, egg whites, butter, salt, and melted chocolate. Mix well.
- Spoon half the mixture into 6 x 3 1/2" lightly greased mini ramekins. Alternatively, you can use four larger ramekins for larger servings. Divide the chocolate sqaures between the ramekins and top with the remaining mixture. Bake for 20 to 30 minutes or until cooked but soft in the middle. Stand in tins for 5 to 7 minutes before turning out. Serve immediately.
