Calling All Chocoholics...

Chocolate Lava Cakes
        I can barely contain my excitement. Thoughts are rushing through my head, all jumbled together and confusingthings like "oh my goodness - HOW can this BE?!"  and "chocolate heaven does exist"! Seriously. The following recipe is a real keeper, and I say this with complete conviction.
        Chocoholics in the world - this is for you, my friends. Molten Chocolate Lava Cakes. These cakes are, quite literally, oozing chocolate goodness. Just dig right in with your fork and see for yourself.
        There is nothing stopping you from going into your kitchen right now and making these decadent cakes, because you can whip up the batter in just minutes and pop these in the oven. Which is kind of scary, if you ask me. Delicious + Easy + Fast = Dangerous, because like I said, there's nothing stopping you.
       Warning: If you eat this lava cake, good things will happen to you. You may feel the need to do a happy dance around your kitchen, so make sure no one's watching. You have been warned.



Chocolate Lava Cakes
(adapted from Fast, Fresh, Simple)

Yield: 4 to 6 servings | 6 3 1/2" cakes or 4 larger


Ingredients
1/4 cup (50g) all-purpose flour
1/2 cup (55g) confectioners' sugar
3/4 cup (90g) almond meal or almond flour
2 egg whites
6 tablespoons unsalted butter, melted
8 ounces good-quality dark chocolate (60-70%), melted
4 to 6 small squares good-quality dark chocolate (60-70%)


Directions

  1. Preheat oven to 300 degrees F (150 degrees C). In a medium bowl combine flour, sugar, almond meal, egg whites, butter, salt, and melted chocolate. Mix well.
  2. Spoon half the mixture into 6 x 3 1/2" lightly greased mini ramekins. Alternatively, you can use four larger ramekins for larger servings. Divide the chocolate sqaures between the ramekins and top with the remaining mixture. Bake for 20 to 30 minutes or until cooked but soft in the middle. Stand in tins for 5 to 7 minutes before turning out. Serve immediately.
